This is my first time eating (or even seeing) chervil roots (cerfeuil tubéreaux). Following the instructions of the marchand, I shaved the tubéreaux with a knife into a green salad, which included chervil leafs, then tossed the salad with a vinaigrette. The roots and the leaf have a wonderful liquorice flavor (comme Ricard, according to the marchand). Très delicieux.
